Executive Chef Othman Abu Baker is a chef with a passion for local foods and would go to lengths to ensure that the best representation of our local foods are being served. In fact, there are even internal cooking competitions among Swiss Garden’s reputable chefs nationwide to ensure that the best recipes are being kept and implemented. Chef Othman was so adamant in staying true to each dish’s origin that he travels to where they originated just to study their recipes. He travelled to Melaka to study curry laksa, Johor Bahru for asam pedas and so on.
Nasi Lemak Istimewa
This special Nasi Lemak might just be your new favourite. What sets this dish apart is that its rice is cooked in rich young coconut milk making it taste sweeter than most. Not to mention, the sambal (chilli paste) is to die for with its perfectly balanced sweet to spicy ratio. Coupled with crispy and flavourful fried chicken, this dish is a must have at the restaurant. Do not be fooled by it being a hotel restaurant as you will discover that it is very much affordable. Besides, where else can you get two big pieces of prawns in your sambal?
For those of us who prefer noodles, this here is a hidden gem. It is not often that we talk about Mee Mamak in a hotel restaurant but when we do, you can be sure that it was well worth it. The secret to its distinctive and delectable taste is that it is cooked with dry cuttlefish paste. That adds so much to the flavour while not being overpowering.
Asam Pedas Maharani
Who doesn’t love a bowl of glorious asam pedas with juicy, fresh fish? Created through meticulous study and a nationwide internal competition, this dish sure lives up to the build up. With the right amount of spiciness and flavour, the taste will leave you craving for more. We warn you, you might find yourself going back for more!
To all the meat lovers out there, this one will definitely satisfy you. Served in a generous portion with nasi briyani, this is not only delightfully filling but also tremendously tasty. The tenderness of each bite coupled with the aromatic flavour of its sauce makes this dish a must-have at the restaurant.
Panini Club Sandwich
Now, we need to mention this sandwich because not only is it one of their bestsellers, it is also among Chef Othman’s favourite dishes. It is a sandwich with smoked turkey, chicken and greens in between two pieces of homemade bread with white and black sesame seeds. We can assure you, a sandwich doesn’t get any better than that. The filling is perfectly cooked and the homemade bread just has the best texture to go with it. We highly recommend it!
